Beef as a protien is typically not used in traditional ramen either but Chef Noriyuki Sugie has fused traditional noodles and garnishes with the non-traditional beef protein. Chef Noriyuki Sugie uses the best parts of the Bull. Hence, the RAMEN BULL!
